Brownie Batter Pancakes

Yield: 6 – 8 silver dollar pancakes

Ingredients

  • 1/4 cup spelt, white, or oat flour
  • 1 tbsp Dutch cocoa powder
  • 1 1/2 tbsp sweetener of choice
  • 1/4 tsp baking powder
  • 1/16 tsp salt
  • 1 1/2 tbsp oil (or applesauce/mashed banana for fat-free)
  • 1 tsp pure vanilla extract
  • 4–5 tbsp milk of choice

Instructions

  • Stir the dry ingredients together, then add the wet ingredients. Add more milk as needed to reach a batter consistency. Grease a nonstick pan and heat over medium. To test the pan, add a drop of water — it should sizzle when ready. Drop small ladles of batter onto the skillet and flip with a spatula when edges begin to look dry. Re-grease the pan between batches as needed.

    I prefer the version made with oil, but the fat-free option using applesauce or mashed banana works well for readers who want no added fat. I haven’t tested substituting regular cocoa for Dutch, so let me know if you try that swap.
