One of my friends has been staying with me while she waits to move into a new apartment, so it’s felt like a mini slumber party — movie nights, spa nights, and chocolate every evening.

Last night we tried healthy chocolate chip cookies, and this morning we both woke up craving chocolate again. The perfect cure: a chocolate pancake breakfast.

Brownie Batter Pancakes
Ingredients
- 1/4 cup spelt, white, or oat flour
- 1 tbsp Dutch cocoa powder
- 1 1/2 tbsp sweetener of choice
- 1/4 tsp baking powder
- 1/16 tsp salt
- 1 1/2 tbsp oil (or applesauce/mashed banana for fat-free)
- 1 tsp pure vanilla extract
- 4–5 tbsp milk of choice
Instructions

Stir the dry ingredients together, then add the wet ingredients. Add more milk as needed to reach a batter consistency. Grease a nonstick pan and heat over medium. To test the pan, add a drop of water — it should sizzle when ready. Drop small ladles of batter onto the skillet and flip with a spatula when edges begin to look dry. Re-grease the pan between batches as needed.
I prefer the version made with oil, but the fat-free option using applesauce or mashed banana works well for readers who want no added fat. I haven’t tested substituting regular cocoa for Dutch, so let me know if you try that swap.
