Since then I’ve experimented with many nice cream combinations—bananas, mixed fruits, and especially chocolate. This Chocolate Peanut Butter Nice Cream is one of my favorite versions.

It won’t perfectly mimic traditional dairy ice cream, and I don’t pretend otherwise. But as a healthier alternative it delivers: sweet, creamy, and the irresistible pairing of chocolate and peanut butter.

I still enjoy real ice cream from time to time, but when I want something light and simple, I reach for this recipe. It’s made from ingredients I usually have on hand and comes together in minutes.

Recipe Ingredients–What You Need

  • 4 frozen bananas
  • 1/3 cup unsweetened cocoa powder
  • 1/3 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon sea salt

There’s no added sugar in this recipe, so it works well if you’re doing a No Sugar Challenge—or just trying to cut back. Summer doesn’t have to mean giving up ice cream.

  3. Be patient—it may look grainy at first, but it will come together as the blades break down the frozen bananas.
