Our keto marshmallows are made with just three ingredients and turn out incredibly fluffy and chewy. Because they are sugar-free and use sugar alcohols instead of cane sugar, they don’t toast in the same way as traditional marshmallows. Instead of crisp charring, you’ll get a delightful, melted marshmallow fluff — which pairs perfectly with gently melted chocolate.

If you prefer a different format, assemble them as wagon wheels (moon pies) for a decadent sandwich cookie variation that’s seriously addictive and one of the favorites on the site.

The Keto Marshmallows

These three-ingredient marshmallows are incredibly easy to make at home. Compared with many store-bought marshmallows that contain corn syrup and additives, these are a cleaner option. Using high-quality gelatin—such as grass-fed gelatin—adds collagen, so you can think of them as little collagen treats as well as a sweet component for your s’mores.

Use quality ingredients to boost the nutritional profile: good fats and clean chocolate will keep this dessert aligned with keto goals. If you’d rather not make marshmallows from scratch, there are sugar-free marshmallow options available commercially; note that some contain maltitol and are not as clean as homemade versions.

Instructions

  • Prepare the keto graham crackers and keto marshmallows, or use store-bought alternatives noted below.
  • Assemble the s’mores: sandwich a marshmallow and a piece of dark chocolate between two graham crackers.
  • To melt the chocolate, gently heat with a kitchen torch or microwave short bursts on parchment until soft, then slide the chocolate onto the cracker and sandwich together.
  • Note: sugar-free marshmallows won’t brown like traditional marshmallows due to different candy-making properties of sugar alcohols, but they will become soft and gooey for a delicious marshmallow fluff texture.
