Crunchy Pistachio Salad with Feta and Citrus Vinaigrette

Pistachio salad was a holiday staple at my parents’ house when I was growing up. The vibrant green hue made it an eye-catching addition to holiday tables, and it was always appreciated for how quick and fuss-free it was to prepare.

Even after many years, this pistachio salad remains a holiday tradition in my family. We serve it at Christmas and Easter as well as on St. Patrick’s Day. For Easter I often add pastel, multi-colored mini marshmallows—kids love the color and the extra bite those add.

You can serve this pistachio salad plain, or dress it up with a dollop of whipped cream, a sprinkle of chopped pistachios, and a maraschino cherry for a classic retro look.

This recipe scales easily—double or triple it for larger gatherings. It’s a fun, nostalgic side or dessert to bring to potlucks and family get-togethers and is almost always enjoyed by both adults and children.

The salad is so simple my five-year-old assembled it on her own recently for a family dessert. Preparation only takes a few minutes, and it needs a short chill to set. If you’re pressed for time you can enjoy it after 20–30 minutes, but I prefer making it the day before and adding any toppings right before serving.

  • 1 3.4 oz box gluten free pistachio pudding
  • 1 ½ cups milk use 2% or whole milk for creamier texture
  • 2 cups Cool Whip thawed
  • 1 cup mini marshmallows white or multi-colored

Method
