A lower-fat coffee cake that keeps the classic cinnamon swirl and tender texture. Light enough for breakfast, rich enough for dessert.
Ingredients
For the cake:
- 4 tablespoons unsalted butter, softened
- 2 eggs
- 3/4 cup sugar
- 1/3 cup non-fat plain Greek yogurt
- 1/2 cup light sour cream
- 2 cups cake flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/2 cup non-fat buttermilk
For the filling:
- 2 teaspoons ground cinnamon
- 1/4 cup sugar
- 1/4 cup dark brown sugar
- 2 tablespoons melted butter
Instructions
- Preheat the oven to 375°F (190°C). Grease a bundt pan or spray it with nonstick spray and set aside.
- In a large bowl, cream together the softened butter and sugar. Add the eggs, Greek yogurt, and light sour cream, mixing until smooth and well combined.
- In a separate bowl, whisk together the cake flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Gently stir in the buttermilk—take care not to overmix.
- For the filling, combine the dark brown sugar and granulated sugar with the melted butter, then stir in the ground cinnamon until evenly mixed.
- Pour about half the batter into the prepared bundt pan. Spread the cinnamon filling evenly over the batter, concentrating it around the center and sides. Spoon the remaining batter on top and use a knife to swirl the filling through the batter, circling the pan about three times.
- Bake for approximately 25 minutes, or until a toothpick inserted into the cake comes out clean. Allow the cake to cool completely before removing it from the pan. If desired, sprinkle with additional cinnamon sugar or drizzle a light glaze.
