Ingredients
- 4 slices focaccia
- 120 g leftover roast chicken, shredded (rotisserie or cooked thighs work well)
- 3 tablespoons mayonnaise
- ⅓ teaspoon Dijon mustard
- 2 teaspoons chopped chives
- salt and pepper, to taste
- rocket
- 4–6 rashers of streaky bacon, fried until crispy
- basil pesto (store-bought or homemade)
Instructions

Shred the leftover roast chicken into small, bite-sized pieces.

In a bowl, combine the shredded chicken with mayonnaise, Dijon mustard and chopped chives. Mix until evenly coated and season with salt and black pepper to taste.

Lightly fry the focaccia, cut side down, until it turns golden and slightly crisp.

Spread a generous layer of basil pesto over both slices of focaccia. Pile the chicken mixture onto one slice, then add several slices of crispy streaky bacon.

Top with a handful of rocket leaves, close the sandwich with the other slice of focaccia, press gently and serve immediately.
