Potluck season is upon us—Easter, Mother’s Day, Memorial Day, and then summertime. This Fluffy Orange Jello Salad is a spring and summer favorite that’s quick to make, kid-friendly, and great for feeding a crowd.
This salad is made from simple pantry ingredients like marshmallows and pudding, and it comes together easily. It’s a regular at family gatherings and lake trips because kids love it and adults do, too. Here’s how to make it:

- Pour 1 cup hot water into a glass measuring cup and heat to boiling in the microwave (about 2–3 minutes). Add two 3-ounce packages of orange gelatin and stir until completely dissolved.

- Add 1 cup crushed ice and stir until the ice melts. Chill in the refrigerator for 20–30 minutes, or until the mixture reaches the consistency of thick pudding.

- In a large bowl, combine 8 cups miniature marshmallows, two 15-ounce cans drained mandarin oranges, and one 20-ounce can crushed pineapple (undrained).

- Sprinkle a 5.1-ounce box of instant vanilla pudding into the bowl. Add one 12-ounce container of thawed Cool Whip and stir until combined.

- Retrieve the chilled orange gelatin and fold it into the large bowl. Stir gently to combine everything.

Refrigerate the salad for at least 1 hour and up to 12 hours to set and let flavors meld. Serve chilled.
