Ingredients
- 1 Tablespoon olive oil
- 1 pound ground chicken (or substitute ground beef or turkey)
- 1 large yellow onion, finely chopped
- 1 large green bell pepper, finely chopped
- 1 medium carrot, finely chopped
- 16 oz can tomato sauce
- 1/4 cup ketchup
- 2 Tablespoons tomato paste
- 2 Tablespoons Worcestershire sauce* (check for gluten-free if needed)
- 1 teaspoon chili powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon sugar
- 1/2 teaspoon dried oregano
- Freshly ground black pepper, to taste
- One 32 oz package frozen tater tots (seasoned or unseasoned — see note)
Instructions
- Remove the tater tots from the freezer to begin thawing while you prepare the other ingredients.
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a large cast-iron or ovenproof skillet over medium heat. Add the ground chicken, chopped onion and bell pepper. Cook until the meat is no longer pink and the vegetables are softened.
- Stir in the carrot, tomato sauce, ketchup, tomato paste, Worcestershire sauce, chili powder, salt, sugar, oregano and black pepper. Mix thoroughly and let the flavors combine briefly over medium heat.
- Spoon the meat mixture evenly in the skillet and top with 3/4 to the entire bag of tater tots, depending on how thick you want the topping.
- Place the skillet in the preheated oven and bake 15–20 minutes, or until the tater tots are cooked through and the filling is bubbling. Because the meat is already fully cooked, this step melds flavors and finishes the tots.
- Turn on the broiler and move the skillet to the top oven rack. Broil a few minutes to crisp and brown the tater tots to your liking — watch carefully to avoid burning.
- Serve hot with extra ketchup if desired. Store leftovers in an airtight container; they keep well for several days and reheat easily.
