Step #1 — Sear chicken & sauté aromatics

  • Sear chicken: On SAUTE (HIGH), heat oil and sear chicken until lightly golden. Remove and set aside.
  • Sauté aromatics: In the same pot, sauté onion 1 minute, then add ginger and garlic until the onion softens.

Ingredients

  • 1.5 pounds Chicken Breast (boneless, skinless, diced into ½–1 inch cubes)
  • 1 cup onion (yellow, diced)
  • 1 tbsp garlic (minced)
  • 1 tbsp ginger (finely grated)
  • 1.5 cups zucchini (diced, optional)
  • 1 cup red bell pepper (chopped, optional)
  • ¼ cup Tomato Ketchup
  • ½ cup peanut butter (smooth)
  • 1 tbsp brown sugar
  • ½ cup peanuts (skinless, dry roasted)
  • 2 tbsp Olive Oil (light or extra light)

Homemade Spice Mix

  • 1 tsp ground coriander
  • 1 tsp ground cumin
