Seasoning: A simple mix of garlic powder, onion powder, salt, pepper, paprika and oregano creates a balanced flavor.
Olive oil: Extra virgin olive oil helps the spices adhere and promotes crisping.
Lemon juice: Adds a bright, tangy finish that complements the spices.
Fresh herbs: Chopped cilantro is used here, but parsley, rosemary or thyme also make excellent garnishes.

Instructions
Wash and dry the baby potatoes thoroughly.

Cut the potatoes in half (or quarter larger ones). Combine the spice mix ingredients in a bowl and set aside. Toss the potato halves with olive oil so they are evenly coated.
Add lemon juice and mix well. Sprinkle the spice mix over the potatoes and toss again so each piece is seasoned.

Lightly brush or spray the air fryer basket with oil. Arrange the potatoes in a single layer, leaving space between pieces for air circulation.

Air fry at 200°C (390°F) for about 13–15 minutes, or until the skins are crispy and the insides are tender. Shake the basket once or twice during cooking for even browning. Test one potato to ensure it’s cooked through.

Remove the potatoes, garnish with chopped fresh herbs, and serve hot.

Spice mix:
- 1 tsp. garlic powder
- ½ tsp. onion powder
- ½ tsp. ground pepper
- ½ tsp. dried oregano
- 1 tsp. paprika or Kashmiri chilli powder
- ½ tsp. salt
- 1 tbsp. lemon juice
