I discovered Catherine McCord’s Weelicious and it changed the way I approach meals with my kids. I’d always thought good food alone would win them over, but real change came when I started involving my daughter in the cooking process.

My husband and I do what we can—garden, visit the farmer’s market and eat together as a family—but our four-year-old still often ignores meals. Reading Weelicious and trying recipes from The Weelicious Cookbook taught me that participation can make a big difference.

Before that, I’d only let her do small tasks—occasionally bake cookies or peel a carrot. I didn’t let her help choose or take control of the meal. When The Weelicious Cookbook arrived, I handed it to Louisa and asked her to pick dinner. She chose a muffin-like treat on a stick and was immediately excited.

She helped with the whole process — even breaking and cracking an egg into the bowl. I was nervous, but she did it perfectly. Giving her responsibility made the experience fun and meaningful for both of us.

We enjoyed making the snack together, and I’m looking forward to trying more recipes from the book like Chocolate Velvet Beet Cupcakes, Bacon and Cheese Waffles, and the Teething Cookie for the baby.

Corn Dog Bites On a Stick and a Giveaway

Recipe from The Weelicious Cookbook. If you don’t have ice pop sticks, you can bake these as Corn Dog Mini Muffins instead.

Ingredients

  • 2/3 cup all-purpose flour
  • 1/3 cup cornmeal
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk (soy milk works well)
  • 1 tablespoon vegetable or canola oil
  • Olive oil or canola oil cooking spray
  • 3 to 4 hot dogs or veggie dogs, sliced into 1/2-inch pieces (I used fewer pieces because my hot dogs were longer)
  • Wooden ice pop sticks

Accompaniments:

  • Ketchup, mustard, barbecue sauce, or hot sauce, to taste

Instructions

  1. Preheat the oven to 400°F.
  2. Combine the flour, cornmeal, baking powder, sugar, and salt in a medium bowl.
  3. In a separate bowl, whisk together the egg, milk, and oil.
  4. Slowly add the dry ingredients to the wet and stir until combined.
  5. Spray a mini muffin pan with cooking spray. Drop 1 tablespoon of batter into each cup, place a piece of hot dog in the center, then add 1 teaspoon of batter over the hot dog.
  6. Place a stick in the center of each corn dog bite so it pierces the hot dog. Alternatively, bake first and insert sticks after the bites cool.
  7. Bake 10–12 minutes, until golden.
  8. Serve with your chosen accompaniments.
