  • Green chilli pepper – Fresh jalapeño or similar works well. Jarred chillies will change the flavour, so use fresh if you want bright heat.
  • Sour cream – Provides tang and creaminess. Greek yogurt or labneh can be substituted.

How to make air-fried sweet potato canapés

These canapés are simple to prepare. Peel the sweet potato and slice into rounds about ½ cm thick. Optionally, soak the slices in cold water for 30 minutes and pat dry; this removes excess starch and can help them crisp a bit more.

Toss the slices in a little oil and a pinch of salt, then arrange them in a single layer in your air fryer. Cook at 185°C (365°F) for about 15 minutes, turning once halfway through. The slices won’t be paper-crisp but will hold their shape and support the toppings.

Allow the sweet potato slices to cool slightly so the sour cream doesn’t melt. Top each piece with about ½ a teaspoon of sour cream (or a small dollop), a thin slice of chilli, and ½ teaspoon of caviar.

Can you adapt the recipe?

Yes. Treat this as inspiration and adapt to taste. If you don’t have an air fryer, bake the slices on a tray at 200°C (400°F) or shallow-fry them until tender. Swap green chilli for red chilli, pickled chilli or mild chives for less heat. Replace sour cream with thick Greek yogurt, labneh, or a mild guacamole for a different profile. The caviar can be substituted with roe or omitted entirely—try a small herb garnish for freshness if you skip it.

Can you prepare these canapés in advance?

Yes. You can cook the sweet potato slices a few hours ahead and assemble up to a couple of hours before serving. If preparing the day before, cook the slices and store them refrigerated, then assemble just before serving; note that the cooked slices will soften over time.

Storage and freshness

Cooked sweet potato keeps well in an airtight container in the refrigerator for about three days. Opened caviar is best used within three days as well. Assemble canapés as close to serving time as possible for the best texture.
