Ingredients
Fruit is often limited on low‑carb plans because of sugar, but blueberries are relatively low in carbs and high in fiber, so a modest amount works. This recipe calls for fresh berries — frozen ones can release water and make the chaffle soggy unless fully thawed and drained. We use fresh blueberries for the best texture and flavor.

Joanie adds two special touches: a teaspoon of blueberry extract in the batter for consistent flavor and a pinch of cinnamon for warmth. She uses just a little erythritol; adjust sweetener to taste if your berries are sweeter or tarter than expected.

- Blueberry Chaffle Dessert

1/2 cup Mozzarella cheese grated

1 teaspoon Erythritol (or sweetener of choice)

Instructions
- Blueberry Chaffle Dessert
- Spray a mini waffle maker with cooking spray and preheat until ready.
- In a small bowl, combine egg, grated mozzarella, erythritol, baking powder, blueberry extract and cinnamon. Mix well (a blender works fine).
- Pour batter into the center of the waffle maker and spread to the edges. Top with about 6 fresh blueberries before closing the lid.
- Close the lid and cook for 3 1/2 minutes.
- Remove the chaffle and cool on a rack for 5 minutes. Repeat for the second chaffle. Finish with whipped cream and a few fresh blueberries.
