Crispy Air Fryer Baby Potatoes in 15 Minutes

These roasted, crispy baby potatoes made in the air fryer are an easy, flavorful side dish that pairs well with breakfast or any main meal. They develop a crunchy skin and a soft, fluffy interior — ready in a fraction of the time an oven requires.

Fresh herbs: Chopped cilantro is used here, but parsley, rosemary or thyme also make excellent garnishes.

Instructions

Wash and dry the baby potatoes thoroughly.

Cut the potatoes in half (or quarter larger ones). Combine the spice mix ingredients in a bowl and set aside. Toss the potato halves with olive oil so they are evenly coated.

Add lemon juice and mix well. Sprinkle the spice mix over the potatoes and toss again so each piece is seasoned.

Lightly brush or spray the air fryer basket with oil. Arrange the potatoes in a single layer, leaving space between pieces for air circulation.

Air fry at 200°C (390°F) for about 13–15 minutes, or until the skins are crispy and the insides are tender. Shake the basket once or twice during cooking for even browning. Test one potato to ensure it’s cooked through.

  • 2 tsp. extra virgin olive oil

Spice mix:

  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • ½ tsp. ground pepper
  • ½ tsp. dried oregano
  • 1 tsp. paprika or Kashmiri chilli powder
  • ½ tsp. salt
  • 1 tbsp. lemon juice

Garnish

  • 1 tbsp. cilantro leaves finely chopped, optional

Instructions

  • Mix together all the spice mix ingredients and set aside.
  • Toss the potatoes with olive oil so they are evenly coated, then add lemon juice and mix.

  • Place potatoes in a single layer in the air fryer basket and air fry at 200°C (390°F) for 13–15 minutes, shaking the basket once or twice for even browning.
  • Check one potato for doneness. When crispy on the outside and fluffy inside, remove and garnish with chopped cilantro. Serve hot.
