Chipotle Lime Honey Vinaigrette Recipe for Grilled Chicken & Salads

During the past week we celebrated a high school graduation, bought season passes to the water park, and fired up the grill more than once — summer is officially here. I especially enjoy the bright, tangy flavors of the season, so I developed this Chipotle Lime Honey Vinaigrette to pair with my Chipotle Lime Chicken Kabobs. It also complements any salad or grilled seafood like fish and shrimp.

A vinaigrette is a simple way to add a lot of flavor, and this version balances citrus, heat and sweetness. The dressing is tart from fresh lime, sweet from honey, and mildly smoky-spicy from chipotle chile powder. It’s fresher and more economical than store-bought dressings, and it comes together in minutes.

To make the vinaigrette, combine lime juice and zest, honey, canola oil, chipotle chile powder, a pinch of salt, garlic and onion powders, dried oregano, a splash of red wine vinegar, and a touch of your favorite hot sauce in a blender or jar. Blend at medium speed for about one minute until the mixture is well emulsified. That’s it — quick, bright and versatile.

I used to zest citrus with a box grater, but a small handheld micro grater makes zesting much easier and produces fine, flavorful zest. The same grater works well for hard cheeses like Parmesan, so it’s a handy kitchen tool to have on hand.

This Chipotle Lime Honey Vinaigrette pairs beautifully with romaine or butter lettuce and is a great match for cucumbers, radishes, bell peppers, tomatoes and many other salad vegetables. Try it over grilled chicken or seafood for a quick weeknight meal or to dress up a picnic salad. Enjoy a tasty summer!

Ingredients

  • ¼ cup lime juice
  • 1 teaspoon lime zest
  • 3 tablespoons honey
  • ½ cup canola oil
  • 1 teaspoon chipotle chile powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon dried oregano preferably Mexican
  • ½ teaspoon salt
  • ¼ Tapatio hot sauce or your favorite hot sauce

Instructions

  • Add all ingredients to the jar of a blender and blend at medium speed for about a minute until well emulsified.
  • Serve with salad, grilled chicken, grilled fish or shrimp.
