If you love tahini, this dressing highlights its rich, slightly bitter flavor balanced by fresh citrus and tangy apple cider vinegar. It’s not overly sweet; if you prefer sweetness, add a tablespoon of pure maple syrup, though it’s delicious as is.

This oil-free tahini dressing is especially nice during citrus season. Use it to dress hearty greens or as a finishing drizzle on roasted vegetables for an extra layer of flavor.

Though I developed this tahini dressing for salads, it has many applications:

  • Drizzle over roasted vegetables like sweet potatoes, Brussels sprouts, carrots, peppers, or zucchini.

  • Use as a creamy sauce or dip alongside falafel or grain bowls.
