How to make Air Fryer Garlic Rosemary Potatoes
I use one pound of redskin potatoes and keep the skins on for texture and flavor.
Dice them into roughly one-inch pieces, then toss with olive oil and seasonings.
Feel free to swap or add any seasonings you prefer — this is a very adaptable recipe.

Toss everything in a bowl with kosher salt and pepper until the potatoes are evenly coated.
The air fryer does the rest.

Arrange the seasoned potatoes in the air fryer basket in a single layer when possible. It’s okay if they’re not perfectly spread out — just try to avoid heavy overcrowding.
Set the air fryer to 390°F (about 200°C) and cook for 15 minutes.
There’s no need to toss or shake the basket; just let the air fryer work its magic.

When done, the potatoes should be crispy on the outside and tender inside. Taste and adjust with more kosher salt and pepper if needed.

This evening I grilled a pork tenderloin and served these potatoes alongside it.
I mixed ranch dressing, ketchup, and Sriracha for a quick dipping sauce — it paired wonderfully with both the pork and potatoes.
They were popular with my family and some friends who stopped by—always a good sign!

Ingredients
- 1 pound redskin potatoes
- 1 tablespoon olive oil
- 1 tablespoon freshly chopped rosemary
- 1/2 tablespoon garlic powder
- kosher salt, pepper to taste
Instructions

Dice the potatoes into approximately one-inch pieces. In a bowl, combine the potatoes with olive oil, rosemary, garlic powder, kosher salt, and pepper. Toss until evenly coated.
